It's fall, which means the flavors of the season are upon us. I've been wanting to do some Baked French Toast for a while but never quite manage to get myself together and do it.
Well this weekend I bit the bullet and just concocted something myself.
I used a Quiche Pan but any pan would work. Spray the bottom with Pam and pour in a small amount of Whisked Egg (I used Egg Beaters), just enough to coat the bottom in the yellowy mixture. Then take half a loaf of Pepperidge Farm Pumpkin or Cinnamon Bread - I used 1/4 of each - and tear into quarters. Stack around like dominoes and then cram the rest into the middle. Douse generously in your remaining egg mixture, I used almost a whole carton of Egg Beaters for this. It took about 25 minutes at 400 degrees. We coated ours in Maple Syrup before serving it so that it would seep in.
Cheating, yes. The best Baked French Toast in the world, no. A quick and easy fall breakfast on a lazy day, oh yes indeed.
